Different Types of Eggs

In Singapore, any meal is almost incomplete without eggs. Whether it’s our nation’s all-time favourite breakfast of kaya toast and soft-boiled eggs, a plate of nasi lemak topped with an omelette, or a bowl of steaming hot laksa with a hard-boiled egg on the side, the egg is the ingredient that really ties most of our meals together. It’s not hard to understand why they are a kitchen staple as they are relatively affordable, easy to prepare and are a great source of protein!

Read on as we share five ways of preparing eggs. With choices like sunny side up and scrambled, there is an option for every palate and occasion.

Cooking with the right gas cylinder

Before we dive into the different methods of cooking eggs, we hope that everyone at home is equipped with LPG cylinders. For the uninitiated, LPG is a highly efficient cooking gas. With higher calorific value which translates to superior heating capacity, gas cylinders (LPG) help you cook your meals in a shorter amount of time, saving a lot of your time and money on fuel costs. Here’s a brief overview of how LPG can benefit the way you prepare your meals for your family at home:

  • Fast cooking: LPG’s high calorific value allows it to cook faster than other fuels.
  • Safe for use at home: LPG is convenient and safe to use.
  • Instantaneous Temperature Control:  Unlike induction cooker,  LPG gas cookers allow immediate flame control and food is heated evenly when cooking.

1. Over Easy Eggs

Fresh eggs and the right pan are essential to making perfect over easy eggs. Here’s what you need:

  • It is best to use fresh eggs because if they have been in the refrigerator for some time, the whites will spread when they hit the pan.
  • Cast iron or non-stick skillets are ideal. Having a smooth surface is crucial for slipping out the egg once it’s cooked.

Step 1: Heat ½ tablespoon of butter over medium-low heat.

Step 2: Crack an egg or two into the pan, and sprinkle with salt and pepper.

Step 3: Cook for about 2 to 3 minutes, until the whites are set and the yolk is still runny.

Step 4: Flip and cook for 20 to 30 seconds more. Ensure the yolk is still liquid after flipping.

2. Hard-Boiled Eggs

How long should eggs be boiled? There is no simple answer since the eggs don’t actually boil. The trick is to turn off the heat as soon as the water reaches a boil! The exact timing depends on the eggs’ size.

Step 1: Place eggs in a large pot and cover with 1 inch of water.

Step 2: Bring the water to a boil.

Step 3: As soon as it boils, turn the heat off, and let it sit for 15 minutes.

Step 4: Next, transfer the eggs to a bowl of ice water to cool completely before peeling.

As soon as the eggs have finished cooking in hot water, drain the pot and immediately place them in a bowl of ice water. By doing so, the eggs will not continue cooking (resulting in a crumbly, dry yolk).

3. Soft-Boiled Eggs

Its golden and creamy insides and smooth whites make soft-boiled eggs loved all over the world. Here’s how you can get the egg to that elusive state of having an oozy center.

Step 1: Simmer a pot of water until it is just bubbling.

Step 2: Cook the eggs for 6 to 7 minutes.

Step 3: Place eggs in an ice bath for 2 minutes, and then peel them!

Step 4: Lower the time if you prefer runny eggs; higher the time if you want yolks that are just beginning to set.

4. Poached Eggs

Step 2: Crack the eggs carefully into a small bowl first.

Step 3: Cook for 4 minutes or until the whites are set.

Step 4: Remove the egg with a slotted spoon.

Scrambled eggs are a go-to breakfast option for most. The technique can be difficult to master, resulting in them being overcooked, tasteless and rubbery. Here’s a scrambled egg recipe that will change your breakfast game:

Step 1: Beat the eggs with a whisk.

Step 2:  Season with salt and pepper.

In a non-stick or cast-iron skillet, melt butter over medium heat.

Step 4: Put the eggs in. After they have set, gently fold sections of the eggs with a flat spatula.
